Chef Salvatore Olivella is one of the top pizza makers in the country and lucky for us, it just so happens that he opened a new restaurant just miles away. After serving years as a consultant for hotspots such as Marta, L’asso, Numero 28 and co-owning a group of four Italian restaurants in Texas, Olivella has most recently taken his pizza mastery and Italian specialties to the streets of North Bergen, opening his first-ever New Jersey restaurant aptly named Olivella.
Inspired by the chef’s Naples roots, restaurant goers can expect to find dishes such as Sushi di Parma, a housemade fior di latte cheese wrapped in prosciutto di San Daniele, and fresh pasta dishes such as Gnocchi Alla Romagnola with porcini, fresh truffle in a Pinot Grigio sauce and Farfalle di Olivella, bowtie pasta sautéed with smoked Norwegian salmon, shallots, vodka and salmon caviar. There are also meat-forward dishes such as the Pollo alla Valdostana, chicken breast sautéed with wild mushrooms, prosciutto and fontina sauce and Costoletta di Vitello Milanese, thinly pounded veal that’s breaded and served on the bone, topped with salad and parmigiano.
Of course there are also a plethora of pizza options on the menu, which, by the way, are all cooked in a brick, wood-fired oven and use only the highest quality Italian imported San Marzano DOP-certified tomatoes and fresh cheeses made in-house. Choose from Neapolitan-style pies such as traditional Margherita, spicy Inferno, Don Maradona Snow White or get creative with an homage to a Hoboken local, the Frank Sinatra, which is topped with burrata, bresaola, arugula and lemon dressing.
The 50-seat restaurant is located at 7709 Bergenline Avenue and is currently open for lunch and dinner, Sunday – Thursday 11:30 a.m. – 10 p.m. and Friday & Saturday from 11:30 a.m. – 11 p.m. so make sure to stop by soon, we know we will!
